Jerk paste

Jerk paste (or Jerk Seasoning paste) is made from allspice, hot scotch bonnet chillies, and scallions (spring onions). A little goes a long way.

Once opened, it can be kept in the fridge almost indefinitely - the chilli content acts as a preservative.

You'll find this in the aisle for World Foods (or West Indian Foods) in a supermarket.
