Bennett & Luck Salads
Bennett & Luck was a vegetarian restaurant and alternative therapies complex near Highbury Corner in Islington, North London. Inside, a meander through the health food shop led to a vegetarian restaurant, with alternative therapy rooms beyond. Though the restaurant served a hot meal which changed daily, its real stock-in-trade were its vegan salads: a portion of grains - couscous, macro rice, or wholemeal pasta (usually involving seeds or nuts); a portion of beans or lentils (usually fairly plain - the one pictured above is merely boiled lentils and shredded carrot dressed with balsamic vinegar and mint sauce); and a portion of mixed organic salad/slaw...and the Bennett & Luck dressing, which mercifully you could help yourself to.
Since I started Gallagher's Cook It or Wot! I've published a number of recipes that could form part of a Bennett & Luck-style salad. Not all are vegan; some aren't even vegetarian - but trust me when I tell you that they all work well as part of a B&L salad, and each recipe makes roughly enough for 4 meals.
