Mung beans

In the UK, mung beans are typically used in one of two ways, either for sprouting or for making slightly creamy, bland dahls, which can complement spicier Indian dishes. If you are cooking them, there is no need to soak them beforehand - they cook very quickly: 35-40 minutes and they will still hold their shape; 50 minutes or more and they become puree. In small quantities they also make a great addition to a hearty vegetable soup.
